Elaboration
The must is extracted with a pneumatic press in a single pressing process. It is then cooled to 2° C for 24 hours to cause the sedimentation of impurities. The clear must is brought to 12° C and seeded with selected yeasts.
The alcoholic fermentation process takes place between 14° and 16° C in stainless steel “candle” tanks. The base wine is kept in contact with the yeasts for 12 months.
